The Dinner: Easy-Peasy Homemade Pasta!

OK - I have a confession. Even though I love making doughs by hand, I’ve always been VERY intimidated by the idea of making fresh pasta. I am not sure why, but something about creating unbroken strands of chewy, perfect pasta seemed out of reach. Last month for my birthday, however, BOTH my brother and my boyfriend gave me a pasta maker attachment for my stand mixer. I no longer had any excuse not to try!

I wanted to start out with a super simple, easy recipe - and I did not really expect that my first try would go well. When I tried this simple recipe from Love and Lemons, however, I was baffled. It did not require special flour, and it came together in less than an hour. Plus, the noodles were so light and chewy you could even eat them with just a sprinkle of olive oil and salt - and you’d have yourself a simple, delicious meal! They were also excellent with bolognese.

If you have a pasta attachment for your stand mixer, or if you have a pasta maker of any kind, I highly recommend this recipe. It’s super easy and absolutely delicious.
