The Best Leftover Hack: Make French Toast
So Christmas is over, and you’re now wondering how to enjoy this peaceful week before New Year’s when there is not much to do. You might have some leftover cinnamon buns from Christmas morning brunch, or a few extra slices of Panettone that never got eaten. If you’re like me- this happens a LOT. Because I love to bake so much, I often find myself with a few leftover slices of banana bread, cinnamon buns, or biscuits - because after a few days, these scrumptious bites get a bit too hard to enjoy. Even if you don’t love to bake - you probably often throw out a few pieces of stale bread.
HOWEVER, I am here to tell you the EASIEST and most DELICIOUS way to avoid wasting this kind of food: MAKE FRENCH TOAST. For example, I even found myself with two very large panettone cakes this holiday season (delivery mishaps), and I fully converted one of them into several days of breakfasts for me and my boyfriend. Read on to get my super simple recipe for converting any kind of leftover baked good or bread into a tasty breakfast or brunch that is sure to please any crowd!*
*Note: If you want to make French Toast with somewhat still-fresh items, just leave them out overnight, uncovered on a plate so they crisp up.
Ingredients:
4 two or three day old cinnamon buns, biscuits, or slices of bread or panettone
6 tablespoons milk (any kind, including nut milks, will work)
2 eggs
1 tsp vanilla extract
1/4 teaspoon cinnamon
Several tablespoons of butter, cut into small cubes
Instructions:
In a shallow bowl, cake pan, or brownie pan, whisk the eggs and milk. Add the vanilla extract and cinnamon and whisk until combined.
Slice the cinnamon bun or biscuit in half crosswise. If using regular bread or a quick bread (such as banana bread or pumpkin bread), prepare a few normal sized slices.
Soak each side of each slice in the egg mixture.
Heat 1 cube of butter in a non-stick pan over medium - low heat. Once the butter has fully melted, lift the pan and shift it from side to side, ensuring the butter coats the full bottom of the pan.
Using a spatula, place the soaked bun, bread, or biscuit onto the pan. Once the bottom edges start to brown, flip - about 3-4 minutes. Once the bottom edges of the second side start to brown, remove from heat.
Serve with maple syrup or powdered sugar & fruit.
