The Baked Bite: Bakery - Style Blueberry Muffins
Unpopular opinion: blueberry muffins can be a bit… well… boring. Honestly, I do not typically crave them, nor does the idea of whipping up a batch excite me the way creating a perfect lemon poppyseed muffin (see this post) did. However, there ARE a few things that can mitigate the tendency of blueberry muffins to be underwhelming.
First, streusel. You know that crumbly, sometimes crunchy, and always sweet stuff that comes on the top of muffins you find at an excellent bakery? Well, that is streusel. The inclusion of this topping vastly improves a blueberry muffin.
Second, a warm berry explosion. You know the way that warm berries explode into your mouth when you bite into a fresh berry pie, for example? When you bite into a blueberry muffin, the experience should be similar. This requires a sufficient quantity of blueberries, an even distribution of berries throughout the muffin, and serving the muffins warm.
With these criteria in mind, I set out to find a great recipe. As you all know, I like to eat baked goods all the time, so I try to find recipes with nourishing ingredients, if possible. Luckily, the recipe I am sharing today- from gnom gnom- checks all the right boxes.

Tips from Cooking Curated:
Pay attention to the ingredients- specifically, make sure to purchase golden flaxseed meal, as opposed to ground flaxseed, and psyllium husk powder, rather than raw husks. I’ve included links below.
Before folding in the blueberries, coat them in almond flour. Doing so prevents them from sinking to the bottom of the muffins when they bake.
If you bake these in regular muffin tins, you will get pretty small muffins, as they do not rise much. If you want a larger goodie, I recommend using jumbo muffin tins and filling them to the top.

For reference, I have provided links to ingredients that may be less familiar to some of you, but all of these ingredients can be found at Whole Foods and most can be found at other local grocery chains or Target!
Flours Etc.
Any brand of almond flour works, but make sure that you get a super-fine blanched almond flour and not almond meal
Golden flaxseed meal (you must use this and not ground flaxseed).
Psyllium husk powder (make sure you get the powder and not the raw husks).
Fats
Coconut oil can be purchased at any grocery store or on Amazon (refined will not give you a coconut taste, but either refined or unrefined works).
Sweeteners
Lakanto Golden Classic Monkfruit Sweetener (where the recipe calls for golden erythritol)
