The Baked Bite: Banana Cinnamon Scones

At Cooking Curated, I share three recipes each week: one baked bite that can be devoured any time of day, one dinner option, and one scrumptious dessert. Today I am sharing my baked bite recommendation for this week- a recipe for banana cinnamon scones from Orchids & Sweet Tea. If you’re sick of making banana bread, try this recipe next time you have some extra-ripe bananas on the counter!

These scones taste like banana bread and snickerdoodle cookies had a baby, and in addition to being delicious, they are vegan and sweetened with just a touch of maple syrup. To make these grain and gluten-free, I sub out the AP flour with a blend of almond and coconut flour, and I honestly like the taste even better this way!

The Baked Bite: Orchids & Sweet Tea’s Banana Cinnamon Scones

Tips from Cooking Curated:

  • Replace the AP flour with equal parts almond and coconut flour. I do NOT recommend replacing the AP flour with a gluten-free AP blend- it led to a chewy, un-flavorful scone.

  • Make sure the coconut oil is solid (if your kitchen is warmer, chill the coconut oil for 30 - 45 minutes before baking).

  • A ‘pastry cutter’ is not necessary for cutting the coconut oil into the flour mixture. Just use two regular knives, criss-crossing them against each other as if you’re cutting spaghetti noodles.

  • Check the scones for a golden brown color after about 20 minutes (mine were ready much earlier than the recipe suggested).

  • To make sugar free, use powdered Lakanto or erythritol instead of powdered sugar in the glaze. Alternatively, for Paleo, sprinkle coconut sugar on the top of the scones before you bake instead a glaze altogether- trust me, it gives the finished product an amazing snickerdoodle taste.

  • You can swap the raisins out with chopped nuts or chocolate chips, or skip the mix-ins altogether!

The Ingredients:

For reference, I have provided Amazon links to ingredients that may be less familiar to some of you, but all of these ingredients can be found at Whole Foods and most can be found at other local grocery chains. 

Sweeteners

  • Sugar-free replacement for powdered sugar in glaze

    1. Powdered monk fruit or powdered erythritol will both work 

    2. If you are Paleo or do not like the taste of monk fruit/ erythritol, try topping the scones with Coconut sugar before baking (Paleo and refined-sugar free replacement for brown sugar)

  • Make sure you get 100% pure maple syrup and not maple flavored syrup, which can contain additives and cornstarch

Flours Etc.

  • Almond flour can be purchased at any grocery store or on Amazon, but make sure that you get a super-fine blanched almond flour and not almond meal (any brand works)

  • Coconut flour can be purchased at any grocery store or on Amazon (any brand works)

Fats

  • Coconut oil can be purchased at any grocery store or on Amazon (any brand works)
