The Dinner: Hot Chicken & Coleslaw
Hope you are all doing well and enjoying some warm summer days! Today I’m sharing my dinner recipe recommendation for the week: un-fried hot chicken from Defined Dish and classic southern coleslaw from Come Sit at the Table.
My brother went to college in Nashville, and he and his girlfriend introduced me to the incredible hot chicken at Hattie B’s. Next time you are in the area, I highly recommend checking it out. However, if you want to enjoy that same delicious, fiery flavor on a healthier and more frequent basis, try this recipe! You will not be disappointed. I have always believed hot and spicy flavors need to be paired with something creamy to take the edge off, so I found a delicious, dairy-free, southern-style coleslaw to serve alongside the chicken. I think the crunch from the freshly chopped cabbage, in addition to the crispiness of the chicken skin, creates an incredible texture combination.

You MUST use bone-in, skin-on chicken thighs for this recipe to turn out well! The crispiness of the chicken skin makes up (at least partly) for the lack of a fried-outer coating.
Pat the chicken thighs dry with a paper towel and season them well with salt and pepper- this process ensures the skin will crisp up.
If you do not have a cast-iron skillet, you can use any oven-proof skillet. However, cast-iron lends itself to creating an incredible crisp!

The Modifications:
Both these recipes are naturally gluten, grain, and sugar-free, and the coleslaw recipe is also dairy-free! The sauce for the hot chicken includes ghee, which is a lactose-free dairy product. If you prefer to avoid dairy completely, however, try replacing the ghee with butter-flavored coconut oil.
