Hope you’re all having a great week. Since quarantine started, I’ve definitely gotten into making pretty elaborate dinners that occasionally take way longer than I’d like. This recipe for Asian Lettuce Cups, however, reminded me that sometimes the tastiest recipes are the quick and easy ones! This recipe is a great way to use up leftover veggies in the fridge- just make sure they would taste good with an Asian style sauce. Simply add them in the beginning with the carrots, mushrooms, onions, and pepper (or replace these with the veggies you have on hand)!
Follow the recipe closely for the sauce (and dipping sauce)- because it gives the dish its flavor. If you do not have coconut aminos, you could use regular soy sauce (though the recipe will no longer be Keto, Paleo, or Whole30). The fish sauce is optional, but the flavor it provides makes the sauce noticeably better- so I highly recommend investing in some!
Definitely make sure to add the water chestnuts- you can buy them in a can from the grocery store, and they provide excellent crunch!
